Magical Mystery: Speculaas! (11/6/09)

When our friends visited us last week from Amsterdam, they brought us some delicious Speculoos! We promised them we’d use it in a Speculaas cupcake. I’m sure you’re wondering what is Speculoos/Speculaas? Well, Speculaas refers to a crunchy spice cookie popular in The Netherlands and Belgium. Speculoos is a creamy spread made from Speculaas cookies.

Today we’ve got a warm, spice cake filled with delicious Speculoos cream, topped with vanilla bean frosting and a crunchy Speculaas cookie we made.
